A PDF exported from Word carries a real text layer, so converting it back is trivial. A PDF produced by a scanner, a fax gateway or a phone camera is a stack of images in a PDF wrapper — there is nothing to extract. Morphix checks each page first: if a usable text layer exists it is used directly, and only genuine image pages go through OCR. Mixed documents get the best of both.
